Two Low Carb Cauliflower Fritter Recipes That Actually Work!

I’ve tried so many recipes and have only been able to make dissolving balls of cauliflower mess! So I decided to take things into my hands and come up with my own recipe for us all and I came up with two!

 

 

RECIPE ONE | Cauliflower Fritters

 

Ingredients:

2 cups Cauliflower rice (florets and stalk roughly pulsed into rice)

1 egg

1/2 cup Grated tasty cheese

1 tsp Xantham Gun

3 tbsp Spring onions, green part only sliced

Instructions:

  1. Place the cauliflower in a bowl and cook in the microwave for 2-minutes, stir and then back in for another 2-minutes
  2. Lay it out to cool on a towel (I use a chux cloth) and then squeeze all the liquid out. You want the rice to be dry
  3. Combine egg, grated tasty cheese and then mix through xantham gum and spring onions
  4. Roll into balls, 2 large or 3 medium sized and refrigerate for 10 minutes
  5. Heat up some oil and butter in a fry pan and cook on one side for a minute on a medium to high heat and then flip to cook for another minute or so on the other side
  6. Place on paper towel while you prepare your favourite toppings, assemble and serve immediately

RECIPE TWO | Cheesy Keto Cauliflower Fritters

 

Ingredients:

3 cups Cauliflower rice (florets and stalk roughly pulsed into rice)

1 1/2 cups Mozzarella

50g Cream cheese

1/4 cup almond flower

1 egg

 

Instructions:

  1. Place the cauliflower in a bowl and cook in the microwave for 2-minutes, stir and then back in for another 2-minutes
  2. Lay it out to cool on a towel (I use a chux cloth) and then squeeze all the liquid out. You want the rice to be dry
  3. Heat mozzarella and cream cheese in a small pan on medium heat
  4. Stir until they melt together, take off the heat and add the other ingredients
  5. Roll into balls, 5-6 large sized
  6. Heat up some oil and butter in a fry pan and cook on one side for a minute on a medium to high heat and then flip to cook for another minute or so on the other side
  7. Place on paper towel while you prepare your favourite toppings, assemble and serve immediately
